Let’s get something clear from the start. I love bread. I love pasta. I find the sight and smell of a freshly baked croissant very hard to resist with my morning cup of coffee. All of these delicious products are made from wheat. However, wheat is the most problematic food in modern society. The term “gluten intolerance” seems to be becoming more and more commonplace. Many people suffer from gut disorders such as Celiac disease, Crohn’s disease, Irritable Bowel Syndrome, Ulcerative Colitis, Leaky Gut and bloating. Much of these can be attributed to the consumption of wheat. So, what is the big deal with wheat?
